A Holiday Seasonin the heart of Cognac
From December 24, 2026, to January 1, 2027, Cognac takes on the atmosphere of a winter fairy tale. The Hôtel Chais Monnet & Spa invites you to enjoy the holiday season as a complete experience, centered around the art of hospitality: stay in one of its rooms, treat yourself to a wellness retreat at the spa, dine at La Distillerie or La Table des Foudres, and extend the evening at Bar 1838.
Seasonal menus, mixology workshops, musical evenings, and New Year’s Eve dinners set the tone for this special time of year, blending Charente traditions with the artistry of haute cuisine to create a delightful and relaxing culinary escape—from your first treatment to your last drink.
Christmas From appetizers to brunch
On December 24 and 25, from 4:00 p.m. to 5:30 p.m., Bar 1838 is hosting the Christmas Cocktail Experience. During this masterclass, guided by one of the bartenders, participants will learn the essential techniques of mixology and make three winter cocktails themselves, featuring coffee, Cognac, and Christmas spices. The tasting is accompanied by petit fours, in small groups of up to 8 people per session, by reservation only.
On December 24, from 7:00 p.m. to 12:30 a.m., La Distillerie will host a Christmas Eve dinner featuring a three-course menu; no alternative menu will be available. A pianist and singer will provide entertainment during dinner with classic Christmas carols. An optional wine pairing is available, as well as a children’s menu for ages 5 to 12.
On December 25, starting at 12:00 p.m., the Christmas Brunch continues the celebration at La Distillerie, featuring exceptional spirits and gourmet treats created by the restaurant. Each guest can mix their own cocktail—whether a special Christmas recipe or a classic favorite—and leave with a complimentary gift. Brunch is free for children under 5.




New Year's Evefor every taste
On December 31, from 5:30 p.m. until 3:00 a.m., Bar 1838 will host a full evening of New Year’s Eve festivities with two musical acts: a live performance by the band Tulip Jazz during cocktail hour, followed by a DJ set to ring in the New Year. The New Year’s package features a selection of appetizers to share, accompanied by a half-bottle of wine. Table reservations are available.
At La Distillerie, starting at 8:00 p.m., the New Year’s Eve dinner unfolds in four courses, featuring fine ingredients and nods to Cognac. A violinist will provide musical accompaniment throughout the evening, and a glass of champagne will be served at midnight at the bar. An optional wine pairing is available, as well as a children’s menu.
At Les Foudres, a Michelin-starred restaurant, Chef Fröde Torset will present a five-course prestige menu starting at 9:00 p.m., accompanied in the dining room by singer Nena Valverde. A glass of champagne will be served at midnight at the bar, and an optional wine pairing will enhance the dining experience. For guests dining at either of these two restaurants, a stop at Bar 1838 is recommended before dinner.
On January 1, starting at 12:00 p.m., the New Year’s Brunch keeps the celebration going at La Distillerie, featuring both reimagined classics and made-to-order dishes. A complimentary Mimosa cocktail is served upon arrival, and a children’s menu is available.

AND SIGNATURE YULE LOG
The Christmas stay packages, starting at one night, include a room or suite along with in-room treats: treats from the Pastry Chef, a half-bottle of Champagne, guaranteed early check-in starting at 12:00 p.m., and late check-out until 2:00 p.m. The “Esprit de Noël”package includes Christmas dinner and brunch on December 25. The “La Part des Anges” package offers a 60-minute spa treatment per person, a Christmas cocktail, and brunch on December 25.
The New Year’s Eve stay packages, for a minimum of two nights between December 30 and January 2, include these same amenities and breakfast on the second night. The “Millésime Pétillant” package includes a New Year’s Eve dinner at La Distillerie with a glass of Champagne at midnight and brunch on January 1. The “Millésime Étoilé” package features a New Year’s Eve dinner at Les Foudres with a food-and-wine pairing, as well as brunch on January 1.
To extend the magic at home, the Yule log was created collaboratively by Pastry Chef Charly Marc and artist Sylvain Piget; it faithfully replicates the shapes of one of the artist’s works, right down to the spray-painted finish. A Yule log bursting with freshness and citrus flavors, available for order through December 15, with a tasting available at Les Foudres upon request.
