A Visit to Cognac: Hotel Chais Monnet is now opened!

The town of Cognac—surrounded by rolling vineyards on the edge of the Charente River in southwestern France—isn’t just the birthplace of the famous bottled spirit; it was also once a bustling river port and the birthplace of François I, the legendary Renaissance king and arts patron who sponsored Leonardo da Vinci to come work in France.

Trained by some of the world’s top chefs, such as the trailblazing Roger Vergé who is one of the leading lights in contemporary gastronomy, Sébastien headed the kitchens at Cannes’ Grand Hôtel for 8 years where he was awarded a Michelin star in 2008.

Awaking the sleeping beauty

Almost 180 years after their construction, the Chais Monnet will get a new lease of life in 2018, with the complete transformation blue-printed by architect Didier Poignant. After over two years of intense work involving some 400 workers and craftsmen
