Awaking the sleeping beauty

Almost 180 years after their construction, the Chais Monnet will get a new lease of life in 2018, with the complete transformation blue-printed by architect Didier Poignant. After over two years of intense work involving some 400 workers and craftsmen, this heritage site with its ancient stone wine stores so typical of the Cognac region and industry, is set to be reborn as a five star hotel complex offering the very best in local hospitality and tradition.

Trained by some of the world’s top chefs, such as the trailblazing Roger Vergé who is one of the leading lights in contemporary gastronomy, Sébastien headed the kitchens at Cannes’ Grand Hôtel for 8 years where he was awarded a Michelin star in 2008.
